We buy small and cook late. Everything that leaves our pass has touched wood smoke, salt, or time — usually all three.

The menu is written in seven sections so the day reads clearly: breakfast, mains, desserts, beverages, ready-to-drink, retail, and the specials board that changes with the market.

Retail exists because guests kept asking for the coffee and the spice blend. Ready-to-drink exists because the queue at 8am is long and the coffee is good.
